Turkey Meatloaf

2 lbs. 90-96% lean ground turkey
1 tbs olive oil
1/2 small onion finely diced
2 cloves of finely chopped garlic
1/4 cup beef bone broth (for added moisture and protein)
1 large egg
1 tbs sea salt
1/2 tsp black pepper
1 tbs dried oregano
1/2 tbs dried parsley
1/2 cup 4C gluten free breadcrumbs
Directions
- Preheat the oven to 375°F. Lightly spray a 9×5-inch loaf pan with nonstick spray and set aside.
- Heat medium sized skillet over medium heat. Add olive oil and onions heating for about 2 minutes or until lightly golden. Add chopped garlic and continue cooking for about 1 minute until soft and lightly golden. Remove from heat and spoon out onions and garlic into a small bowl and set aside.
- In a large bowl, mix the turkey, breadcrumbs, bone broth, egg, parsley, salt, pepper, oregano, and parsley until combined. Don't overmix or the meat won't be as tender.
- Add onions and garlic to turkey mixture.
- Transfer the turkey mixture to the loaf pan.
- Spoon ketchup on top of the turkey and spread evenly.
- Bake turkey meatloaf 45 to 50 minutes, or until the center reaches 160°F. Allow to rest 5 to 10 minutes before slicing and serving.
Notes
- This turkey meatloaf is a sugar-free, high protein, low-fat recipe but with all of the flavor and tastiness of the traditional comfort food. To complete your meal, serve with mashed cauliflower and broiled zucchini with tomatoes!!
