These zucchini boats can be whipped up in just 30 minutes, making them perfect for busy weeknights. They are filled with lean protein and offer a guilt-free dining experience without sacrificing taste.

Ingredients

  • 2 medium zucchini

  • 2 chicken breasts cooked and shredded

  • 4 oz. cream cheese

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 2 Tbs. buffalo hot sauce

  • 2 Tbs. olive oil

Directions

  • Preheat oven to 350 degrees
  • Slice the zucchini length-wise and scoop out the inside of the zucchini using a spoon. Place the zucchini boats in a glass baking dish and drizzle with olive oil. Bake the boats for 8 minutes.zucchini boats oven ready
  • While the empty zucchini boats are baking, mix the cream cheese, shredded cheddar cheese, the buffalo sauce until creamy. Add the shredded chicken and mix.buffalo chicken mixture

  • Top each zucchini boat with mozzarella cheese and bake for 20-25 minutes, or until zucchini are tender.
