minutesThese zucchini boats are a modification of the buffalo chicken zucchini boats and can be prepared in just 30 minutes, making them perfect for busy weeknights. They are filled with lean protein and offer a guilt-free dining experience without sacrificing taste.
Ingredients
2 medium zucchini
1 lb ground turkey breast
3 oz. cream cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 Tbs. buffalo hot sauce
1 Tbs. olive oil
- Taco seasoning
5 tsp paprika
1 1/4 tsp garlic powder
1 1/4 tsp oregano
1 1/4 tsp cumin
1 1/4 tsp onion powder
1 tsp chilli pepper
1/3 cup water
Directions
- Preheat oven to 350 degrees
- In a large pan, add olive oil and cook the ground turkey on medium heat until brown.
- Mix all taco seasoning ingredients with water, and then add the mixture to the ground turkey and stir.
- Add cream cheese, shredded cheese, and buffalo sauce to the ground turkey and stir until creamy. Remove from heat.
- Slice the zucchini length-wise and scoop out the inside of the zucchini using a spoon. Place the zucchini boats in a glass baking dish and drizzle with olive oil. Bake the boats for 8 minutes.

- Spoon the mixture into the zucchini boats.


- Top each zucchini boat with mozzarella cheese and bake for 20-25 minutes, or until zucchini are tender.

Notes
- This recipe can be customized to personal taste by substituting the ground turkey burger with chicken.
