minutesThese zucchini boats can be whipped up in just 30 minutes, making them perfect for busy weeknights. They are filled with lean protein and offer a guilt-free dining experience without sacrificing taste.
Ingredients
2 medium zucchini
2 chicken breasts cooked and shredded
4 oz. cream cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 Tbs. buffalo hot sauce
2 Tbs. olive oil
Directions
- Preheat oven to 350 degrees
- Slice the zucchini length-wise and scoop out the inside of the zucchini using a spoon. Place the zucchini boats in a glass baking dish and drizzle with olive oil. Bake the boats for 8 minutes.

- While the empty zucchini boats are baking, mix the cream cheese, shredded cheddar cheese, the buffalo sauce until creamy. Add the shredded chicken and mix.

- Spoon the mixture into the zucchini boats.

- Top each zucchini boat with mozzarella cheese and bake for 20-25 minutes, or until zucchini are tender.
Notes
- This recipe can be customized to personal taste by substituting the chicken with ground turkey burger.
